Year 10 Hospitality students recently took part in a culinary masterclass led by Regional Chef James Holden from the Royal Academy of Culinary Arts. The session allowed students to develop practical skills while learning from an experienced industry professional.

During the lesson, students prepared two dishes. They practised filleting seabass, which was served with a Niçoise salad, and produced a stuffed chicken accompanied by pan-fried gnocchi. Chef Holden provided guidance throughout the session, focusing on technique, organisation, and presentation.

Students also had the opportunity to ask questions about Chef Holden’s career and the hospitality industry, supporting their understanding of potential career pathways. The session formed part of the Year 10 Hospitality programme and provided relevant industry context to their studies.
